The Panettone has a typical cylindrical shape contained in a paper cup. It is obtained from a leavened dough based on water, flour, butter, eggs, to which are added candied fruit, orange peel and cedar in equal parts, and raisins.
The typical panettone of the Milan artisan tradition is a soft baked product, with natural leavening process, having a typical cylindrical shape due to the paper baking cup. The upper crust is cut in a characteristic way. The dough has a soft and airy crumbed structure and a typical sour dough aroma.
